Espresso is a concentrated shot of coffee brewed by forcing a small amount of nearly boiling water under pressure through finely-ground coffee beans. It is the foundation for most cafe beverages. A great espresso is thick, intense, and has a beautiful layer of crema.
Pre-heat and Purge
Ensure your espresso machine is properly heated.
Grind Your Coffee
Grind 18g of coffee to a very fine grind size (slightly courser than powdered sugar)
Distribute and Tamp
Level the grounds in the basket to ensure an even bed. Tamp down firmly and with even pressure
Brew
Lock the portafilter into the group head and start the shot. End extraction when you reach 36g of espresso.
Time It
The shot should take between 25 and 30 seconds. If it's too fast, grind finer. If it's too slow, grind coarser.
Serve
Drink as espresso or use as a base for milk beverages like flat white, cappuccino, etc.
