Water: The Secret Ingredient in Great Coffee

When we think about brewing coffee, we usually focus on the beans. We spend time choosing freshly roasted coffee beans, finding the right brewing method, and perfecting our recipe.

But there's one ingredient we often overlook: Water.

Considering that a cup of coffee is made up of more than 98% water, the quality of the water you use can have a huge impact on the final taste. If you're trying to create a café style brew at home, paying attention to your water is one of the simplest ways to improve your coffee.

Does Water Really Make a Difference?

Yes.

Even the best coffee beans can't reach their full potential if they're brewed with poor-quality water.

Water helps extract the flavours, sweetness, and aroma from coffee. If it contains too many minerals, chemicals, or impurities, those flavours can be hidden or altered.

Using clean, fresh water allows the true character of your coffee to shine through.

What Kind of Water Should You Use?

Filtered water is usually the best choice for brewing coffee.

Water with a strong chlorine smell or taste can make your coffee taste dull or unpleasant. Bottled water isn't always necessary, but clean, fresh water is.

The Right Water Temperature

Boiling water isn't always the best option.

For most manual brewing methods, water between 90°C and 96°C works well. If you don't have a thermometer, simply let freshly boiled water sit for about 30–45 seconds before pouring.

This helps extract balanced flavours without making the coffee taste bitter.

Coffee and Water Ratio

Another important part of brewing is using the right amount of coffee and water.

A good starting point is a 1:16 ratio - for every 15 grams of coffee, use about 240 ml of water. You can adjust this based on your preference. Use a little less water for a stronger cup or a little more for a lighter one.

Once you find a ratio you enjoy, try to keep it consistent.

Whether you're brewing with a V60, French Press, AeroPress, or Moka Pot, good water helps bring out the best in your coffee.

If you're brewing single estate coffee or exclusive microlot coffee beans, using clean water makes it easier to taste the unique flavours that make each coffee special.

Even your favourite everyday coffee beans can taste noticeably better with just this small change.
